Oh, and I also freeze my coconut milk before I add it to my smoothies. I divide it up into 3 containers and freeze it.

It freezes well, and adds a whole new flavor and texture (for me anyway)and makes a smoothie absolutely delish...

Coconut milk Laila is such a beneficial food. Like coconut oil, the medium chain triglycerides are a fabulous nutritional boost.

I will sometimes consume a whole can in one day by myself but most days it's about 1/2 can. As Colette mentioned, smoothies are a fabulous delivery but if it is cold, I enjoy it on its own.

My diet consists of clean animal proteins (organic grass raised, wild fish, poultry and eggs, copious amounts of green veggies like kale, chard, collard greens etc. a bit of yogurt, 1/2 cup blueberries and coconut of all types.
