Pizza Crust Recipe

A nice pizza crust recipe is always difficult to conquer while practicing a healthier life stlye. I don't personally eat dough products so this was particularly difficult for me.

I spent many pizza party's just peeling the toppings off but I no longer have to do that with these healthier options.

Crispy Zucchini Pizza Crust Recipe

Heat oven to 350 degrees

Ingredients:

  • 1 ½ Cups Shredded Zucchini*
  • 2 Eggs Beaten
  • 3 cups Shredded Mozzarella Cheese
  • 4 Cloves Roasted Garlic processed in food processor
  • 1 Tsp Basil
  • 1 Tsp. Oregano
  • 1/2 Tsp. Sea Salt

Directions:*Shred Zucchini and lay on cookie sheet spread out as evenly as possible. Sprinkle with a touch of sea salt and let bake for about 15 minutes or until relatively “dry”. When you pull zucchini out of oven, increase heat to 450.

In a bowl, combine 1 ½ Cups Cheese, and remaining ingredients. Mix well and press evenly into greased pizza pan or cookie sheet (I use Olive Oil)Bake at 450 degrees until golden brown about 10 minutes and broil for 5.

Top with pesto, remaining 1 ½ cups cheese, and garnish with your favorite topping! Mine are spinach, artichoke hearts, shallots and chicken. If you've been missing pizza, this is an awesome substitute. My husband who grew up on the East Coast and claims to be a pizza connoisseur gave this a "2 thumbs up".

The photo you see here is pesto sauce, mozzarella and quattro formagio cheese, garlic, roasted chicken, artichoke hearts and shallots.

While this is a bit heavy on the cheese, you will find that a very small piece goes a long way. Be sure to enjoy a nice green salad with it! Remember, veggies are your intestinal wash cloth. (Remember, I said wash cloth, not SOS pad)

Pizza Casserole Recipe

Ingredients:

  • 1 Lb. Ground Beef Browned
  • 1 Medium Chopped Yellow Onion
  • 4 Cloves Garlic Minced
  • 1/2-6oz. Can Tomato Paste
  • 1 8 oz. Can Tomato Sauce
  • 3 Cups Shredded Mozzarella and Jack Cheeses
  • (Pepper Jack is a nice substitute if you like a bit of heat)
  • 1 Cooked, Crumbled Italian Sausage
  • 1 6 oz. Can Sliced Olives
  • 6 Large Mushrooms sliced thin
  • 1 Tsp. Oregano
  • 1 Tsp. Basil

Directions:

Preheat oven to 375. Brown ground beef garlic and onions, add tomato sauce and tomato paste and mix thoroughly. Add 1 1/2 cups of cheese and seasonings to this mixture and press into a large baking dish. Add remaining cheese and top with sausage, olives and mushrooms, bake at 375 for 15-20 minutes.
